HOMEMADE FRUIT KOMBUCHA

Homebrew Kombucha
This video is a tutorial for making fruity kombucha in your kitchen.

To begin with you’ll need:

-3 qts. Filtered water
-1 cup sugar
-4 tea bags (black or green, or both)
-a SCOBY
-3/4 cup starter kombucha
-large glass jar (3.78 Liter/1 Gallon jar)
-a clean cloth
-rubberband

Instructions:

1. Bring 3 qts. water to a boil
2. Add 1 cup sugar, boil until sugar is fully dissolved.
3. Remove from heat. Throw in your teabags. Steep for 10 minutes.
4. Remove teabags. Allow the brew to cool to room temp.
5. Pour the brew into a large glass jar or bowl.
6. Add ¾ cup “starter kombucha” and the SCOBY to your brew.
7. Cover the jar/bowl with a clean cloth and seal it with a rubberband.
8. Store it up on a shelf or counter where it will not be disturbed.
9. Allow it to culture for 7-10 days (depending on the temp in your house…if it’s warmer, it’ll ferment quicker)
10. During this time, your SCOBY will grow a new layer on top. With every ferment, your culture will grow.
11. Remove the SCOBY and ¾ cup fermented kombucha, and temporarily store it (cloth-covered) in a separate glass jar until you are ready to make your next brew.
12. You can enjoy it as is, or, do a second fermentation with fruit (my family’s favorite!)

To get your kombucha fruity and carbonated like mine, you’ll need:

-glass bottles with tight-fitting lids ( I use flip-top bottles)
-your favorite fruits
-a funnel

Instructions:

1. Throw in some pieces of your favorite fruits (we like strawberries, apples, mangoes, blueberries, cherries, & pomegranate seeds) into your bottles.
2. Using your funnel, pour your kombucha filling the bottle to the top. Leave some room at the top for carbonation to build up.
3. Seal your lids tightly. The tighter the better. (I have some loose-fitting lids on a few of my bottles, and they are always the ones with the least amount of carbonation)
4. Store the bottles in a warm dark place for another 24-48 hours ( I prefer to store mine in a big plastic container because I’ve heard that some bottles can burst from pressure. It hasn’t happened to me, but at least if it does, the mess will be confined to a small space and clean up will be easier.)
5. In 24-48 hours pop one open and enjoy the bubbly fruit of your labor. Ahhhh.
6. Store in the refrigerator.
