I take a clean 3l jar
Scoby and about 300ml kombucha drink from
the previous fermentation.
Brew a very strong black tea (8tsp black tea to 500ml thermos) let sit for 1 hour.
Strain the tea from the brew
add 200ml sugar and dissolve completely.
When the tea is cooled pour it into the jar, top
with filtered water, cover and wait.
It may take from 7 to 10 or even more days to ferment The kombucha is ready when its sugar and acidity levels are to your liking, taste regularly from day 5 onwards.
