We’re brewing these beers to share with some friends who are visiting at the end of the week, so Kveik yeast is essential to our recipes because it is meant to ferment very quickly at high temperatures without creating any off-flavors. The Kveik yeast we’re using in this brewing video was harvested from the previous beer made in this series. Harvesting yeast is always a good idea if you want to save money and save wild or expensive yeast. We also ferment this beer in our brewing kettle in order to ferment at the high temperatures this yeast needs.
