SUGAR:
Fruit juice is an excellent foundation for homemade wine. But juice alone may not have enough sugar to produce a high ABV. So, you can add white sugar to increase the potential alcohol content. This particular juice has a specific gravity (sugar content) of 1.030, which means it has a potential alcohol of just about 4%. Adding 3 cups of sugar to this juice provides the yeast with more fuel to create a ~12% ABV wine.
You can add anywhere from 0.5 cups to 3 cups of sugar, but we suggest using a hydrometer to take specific gravity readings when building your recipes!
YEAST:You’ll need to use good quality wine or ale yeast to make hooch at home. We like using EC-1118, a clean fermenting yeast with a high alcohol tolerance. It can reach up to 18% ABV before the yeast cells begin to ‘get drunk’ on the alcohol they create and stop fermenting.
YEAST NUTRIENT:
Homemade hooch is often made with unconventional sugars that lack the nitrogen and nutrients found in wine grapes. To keep yeast healthy and productive use a powdered yeast nutrient like DAP, Fermaid-K or Fermaid-O.
