Kombucha is made by a SCOBY, a living colony of bacteria and yeast. You drop it into sweet tea and it goes to work, eating the sugar and leaving behind a drink that’s fizzy, sour, and full of live cultures.

In a 2023 University of Sydney crossover trial, people drank unpasteurized kombucha with a high-GI meal. It dropped the meal’s glycemic index from 86 to 68, about a twenty percent reduction in the blood sugar spike. Plain soda water and diet soft drink had no effect.

But here’s the catch. Most store-bought kombucha is bottled to sit on a shelf for months. To keep it from over-carbonating and exploding, producers stall the fermentation, and many bottles are pasteurized, which kills the live cultures. A truly live culture can’t sit on a shelf at room temperature. So a lot of what’s sold is closer to flat sugar tea with a health label. The genuinely raw, refrigerated brands are real, but you have to read the label.

This is the real thing. I brew mine with loose leaf tea, never bags, since many tea bags shed microplastics into hot water. Loose leaf, sugar, water, and the culture. Then I split the batch and flavor it. Pear, cherry, and ginger pineapple. A few days in the bottle and it carbonates itself, no machine and no soda stream, just the culture doing its thing.

The blood sugar study is real. Atkinson and colleagues at the University of Sydney, 2023, published in Frontiers in Nutrition. In a crossover trial, drinking unpasteurized kombucha with a high-GI meal dropped the meal’s glycemic index from 86 to 68 and the insulin index from 85 to 70. Soda water and diet soft drink had no effect. Small study, but the result was statistically significant.

On store-bought: the genuinely raw, refrigerated brands with active cultures are real kombucha. The issue is the shelf-stable bottles. If it can sit at room temperature for months, the culture has almost certainly been stalled or pasteurized. Look for “raw,” “unpasteurized,” and a spot in the refrigerated section.

The base brew is sweet tea plus a SCOBY, fermented 7 to 10 days, then bottled with juice for a second ferment that builds the carbonation naturally. For the ginger pineapple I use pineapple juice and a natural ginger soda.

I use loose leaf because many tea bags are sealed with plastic and shed microplastics in hot water.
