Most pour over guides teach you to follow a recipe. The problem: recipes are written for someone else’s coffee, and someone else’s gear. In this video I’ll show you the five levers that actually control extraction — grind size, ratio, water temperature, bloom length, and agitation — and how to read any coffee bag to set them before your first pour. Works with any dripper: V60, Chemex, Kalita, Origami, flat bed or conical.

By the end you’ll be able to dial in pour over coffee from scratch, without a recipe, every time.

Topics covered: what extraction actually is and why the order matters, how to read your bloom and draw-down as real-time diagnostics, how roast level, process, altitude, and freshness change your lever settings, and how grinder profile affects every other variable. Baseline Brew:
15g coffee / 240g water (1:16 ratio)
91°C water
Bloom: ~30-45g water, 30-45 seconds
Total brew time: 3–4 minutes

0m0s – Bloom with small amount of water (I went upper end with 50ml)
0m45s – Pour to 150ml total water
1m30s – Pour to 240ml total water
