We tried our hand at making a Brut IPA. It’d a brand new style of India Pale Ale that is light, dry, and refreshing. The dry finish is obtained by using enzymes to break down carbohydrates into bite sized pieces that the yeast can gobble up and turn into alcohol. This leaves the beer with very little residual sugar, which means that this style isn’t at all sweet. Like Juicy IPAs, much of the hops are added as whirlpool and dry hop additions, so there is a ton of hop flavor without all the bitterness.
