KOMBUCHA BREWING
GATHER SUPPLIES
Cartons of organic blueberries
Cartons of organic raspberries
Bottle of elderberry
Bottle of noni juice
3 ½ C Fresh apple-ginger juice
Cayenne pepper
3-4 funnels
4 Plastic bowls for SCOBY

Navy totes
4 Brew jars
24 bottles
Set up 30 empty bottles on the kitchen island

APPLE GINGER CAYANNE BOTTLES
1 teaspoon of sugar, ¼ tsp of cayenne pepper and ¼ cup of the apple/ginger juice
NONI ELDERBERRY BOTTLES
1 ½ teaspoon of sugar, 2 tbsp of noni juice and 1 tbsp of elderberry juice
MIXED BERRY BOTTLES
1 teaspoon of sugar, 4 smashed raspberries and 4 smashed blueberries
• Remove SCOBY from each GAL brewing jar and place the SCOBY in shallow plastic bowl with 2 cups of “security blanket” fluid from the top of jar (do not stir yet)
• Use tongs and mix all the yeast up
• Use a funnel to fill all 24 jars to the top of the shoulder of the bottles
• Securely fasten each bottle and place in navy totes clearly marking the date they were bottled
• Let sit for 7 days, refrigerate after 10 days at the latest
• Strain out all flavorings and yeast before drinking
Now it’s time to go back to your GAL jar and start the brewing process again:
• Rinse jar in hot water to remove all yeast fragments. DO NOT use soap
• Add 3 inches of boiling water to jar
• Place 10 tea bags into the jar
• Steep tea for 5 minutes, then squeeze bags before removing
• Dissolve 1 cup of sugar into hot tea base and stir until dissolved
• Fill jar just under it’s “shoulder” height with cold filtered water
• Use tongs to ease the SCOBY into the jar and pour “security blanket” in with it
• Put on the cotton cover and secure with a rubber band, date, and let sit for 1-2 weeks.
Once you hit 12 days, do the straw sample test to see if a tart and tang flavor is present. If your tea still has a sweetness about it, give it another day or two. Once the flavor is to your liking, repeat the above process again.
