In this video, I’m going to show you, how to make your own tangy, fizzy kombucha, from Scratch.

This video ties in with my others in the series, on how to make “basic beverages”.

So, many people think that making your own Kombucha is a difficult tricky process- but in this clip, I show you, in a few simple steps, how to make it yourself, with only a handful of ingredients.

To make 1 litre of kombucha, you’ll need:
•4 teabags- organic if possible (I use 2 regular/2 green)
•1/4 cup raw sugar (organic if possible)
•1 litre just boiled filtered water &
•a SCOBY or “mushroom” with 100ml starter fluid (kombucha).

So 1st, pour the sugar into the boiled water, then stir, with a wooden spoon (not metal), til dissolved.
2nd: pop in the teabags & leave for 15mins.
3rd: once cooled, remove t-bags, then pour into a sanitised glass jar/bottle, & gently place your SCOBY & starter liquid on top.
Finally: pop a Muslin/cheese cloth on top of your jar (I use a nut milk bag), secure with an elastic band- & pop it in a warm spot, for around 3-4 weeks in cold weather, or about 2 weeks in warmer weather (the longer the “fermentation”, the fizzier- & less sweet- your brew).

For a sweeter batch, leave it for as short a period as possible, however it won’t be as “fizzy”… leave it a bit longer if you like it fizzier. The longer you leave it the tangier it’ll get- but you can sweeten it up in your second brew.

Now, once it’s ready, gently remove your SCOBY & reserve 100ml of your kombucha (for your next brew). Pour your kombucha into a glass flip top bottle/jar (see my video on FLAVOURING YOUR KOMBUCHA)- ready for flavouring- or simply drink it as is.

So, there you have it! Your own tasty, homemade kombucha, for a fraction of the cost of the store bought version- & without any additives etc!

You can now add your flavourings, a little extra sugar or honey, even maple syrup etc, if you like it a little sweeter (I use stevia, so as not to add any additional calories).

In the next video, I’ll show you how to flavour your brew- keep an eye out for that!
