Kombucha 2F (2nd fermentation) can be tricky. If I leave my bottles at home to go on a 4 day trip, that would be dangerous!

First, DON’T USE CHEAP BOTTLES!

Most aren’t built to handle the pressure (I had one ‘decorative’ glass bottle explode in my daughter’s truck). However, even when using the right bottles, I was still worried when I burped my 2F bottles as they seemed really high in pressure…so, this is just one solution.

I use a weight to hold down the clamp on the bottle to keep a little pressure on the seal so it can get a little carbonation over a few days but not build up a dangerous amount. If it gets really high, it will self-burp and reseal.

When you are ready to finally make it fizzy, don’t burp it, just clamp down the seal fully. After that final clamp down, wait for 6-8 hours and (again, without burping it this time), put it in the refrigerator. That calms down the pressure and makes it fizzy when you go to drink it.
