• 1 kombucha SCOBY
• 1/2 cup of starter (fully fermented kombucha)
• 1/4 cup of sugar
• 1 litre of water
• 2 tea teabags (or loose leaf equivalent) (Recommended Green Tea/Black Tea)
Instructions
1. Boil 1 litre of water, and then add the sugar and stir to dissolve.
2. Add teabags or loose leaf tea and allow the tea to steep for at least 5-10 minutes. Remove the tea/bags (this is tea concentrate)
3. Pour the scoby and starter into a large glass jar.
4. Add the cooled tea and cover the jar with a cloth and an elastic band.
5. Allow the tea to ferment at room temperature for 7-30 days. Taste the kombucha when it has reached 5 days of fermenting to get a feel for what it tastes like. The kombucha should taste pleasantly tart and faintly sweet. The longer you leave fermentation, the more sugar ferments outs and the more tart the brew becomes.
6. When the kombucha has reached a taste you like, reserve 1/2 cup of the kombucha to start a new batch and repeat the process.
7. You can drink the remaining kombucha straight away or refrigerate.
8. If you want a fizzier kombucha , (also known as second fermentation), pour the kombucha into airtight glass bottles and leave at room temperature (you can also add fruit/juice/flavours if you want to at this stage). After a few days, you can drink or refrigerate.
9. Larger quantities of kombucha may be prepared from the second batch onwards, by increasing the ingredients proportionately.

How to make kombucha?
To make kombucha, sweetened green or black tea is fermented with a symbiotic colony of bacteria and yeast, otherwise known as a SCOBY.
During the fermentation process, the yeast in the SCOBY breaks down the sugar in the tea and releases probiotic bacteria.
