How To Make Homemade Kombucha

This week on Hella Well we’ve got the fine folks from Hoochy Booch joining us teaching us all, myself included, how to make homemade kombucha! Kombucha is a fermented fizzy beverage which is rich in probiotics and great for your gut health! With approx 80% of your immune system in your gut its great to get as many of these fermented foods and beverages into your diet as possible!

To make homemade kombucha you will need:

– 1 pot or kettle to boil water
– 6 cups of filtered water
– 2 tea bags or 2 Tsp of loose green or black tea
– 1/2 cup of either organic cane sugar or rogers white sugar
(organic cane sugar is always preferable for all cooking)
– 1 scoby + 1/2 starter tea
(inside the bag with scoby)
– 2 litre clean glass brewing jar. Make sure its thoroughly cleaned with vinegar and hot water as to ensure no growth of bad bacteria!
– Breathable lid & rubberband

Method: – Yields about 2 Litres

1. In a pot or kettle boil 2 cups of water
2. Add tea bag to hot water and steep with the lid on for 8 minutes.
3. Remove tea bags & discard in compost.
4. Add sugar. Stir until dissolved.
5. Add 4 cups of cold water.
6. Cool to room temperature.
7. Once cooled, pour into clean glass brewing jar.
8. Pour in 1/2 cup starter tea (the liquid from the scoby bag if ordering the kit) or 1/2 cup of kombucha from a previously made batch.
9. With clean hands, gently add the scoby.
10. Cover with breathable cloth. Seal tight with rubber band.
11. Name and date your brew.
12. Place jar in warm, dark closet. Depending on the time of year and where you live the brew will probably not begin to ferment for at least 7-10 days.
13. Check on your brew at 7 days, then again at 10, and at 14 days to monitor taste. You want it to be slightly sour or vinegar like with a little sweetness. At the 14 day point taste daily.
You will know your kombucha is done when its not too sweet and it is flavoured to your liking.
14. To flavour your kombucha with additional flavours like ginger, turmeric, or different fruits wait until your kombucha is fermented. At that point add about a teaspoon of the juice of your choice to a jar and add your kombucha brew to that jar.
*BE SURE TO REMOVE SCOBY AT THIS POINT*
15. Put a tight fighting lid on your bottle and store for another 5-7 days in a warm dark room.
*Dont fill your bottle up too high as the liquid will expand and can leak.
Once bottled kombucha can be stored unopened for up to 60 days in the fridge. Opened is 7-10 days in the fridge.
