BEER RECIPE<br />
Pilsner Malt, 3 EBC: 4,200 g<br />
Wheat Malt, Viking Malt: 5,000 g<br />
Château Cara Gold Malt: 800 g<br />
Perle 2024 Hops: 30 g<br />
Hallertau Mittelfrüh 2024 Hops: 45 g<br />
CellarScience HE FE Yeast: 2 sachets, 15 g total<br />
Brewing Water: 22 liters<br />
Sparge Water: 6 liters</p>
<p>Mashing &#038; Boiling Process<br />
&#8211; Start by heating the mash to 45°C and hold it for 15 minutes.<br />
&#8211; Raise the temperature to 52°C and, once reached, hold it for another 15 minutes.<br />
&#8211; Then raise the temperature to 63°C and mash for 30 minutes.<br />
&#8211; Next, raise the temperature to 72°C and mash for 20 minutes.<br />
&#8211; Finally, raise the temperature to 78°C and hold it for 5 minutes.</p>
<p>&#8211; Lift the grain basket and let it drain.<br />
&#8211; Heat the sparge water to 78°C and pour it over the grain bed in three sessions of 2 liters each. &#8211; Let it settle between each session.</p>
<p>&#8211; Bring the wort to a boil at 100°C. Total boiling time: 60 minutes.</p>
<p>&#8211; Add the Perle hops, 30 g, and boil for 60 minutes.<br />
&#8211; In the meantime, fill the fermenter with sanitizer and clean it thoroughly.<br />
&#8211; Prepare the immersion chiller.</p>
<p>&#8211; After 50 minutes of boiling, add the Hallertau Mittelfrüh hops, 45 g, and boil for the final 10 minutes.</p>
<p>&#8211; Turn off the kettle and start cooling the wort.<br />
&#8211; Cool it down to 21–25°C, then transfer it into the FermZilla.<br />
&#8211; Add the yeast sachets and let it ferment at room temperature, around 21°C.</p>
<p>Fermentation &#038; Conditioning</p>
<p>&#8211; Week 1: Keep the fermentation at room temperature, ideally around 20–21°C.<br />
&#8211; Week 2: Fermentation activity should slow down or stop. The beer can remain at room temperature during this stage.<br />
&#8211; Week 3: Cold crash the beer by placing the fermenter in a fridge or cooling chamber at around 6–10°C for one more week.</p>
<p>&#8211; After the third week, transfer the beer into the Oxebar so it can absorb CO₂ by connecting the CO₂ cylinder.</p>
<p>&#8211; Set the pressure to 1 bar at 6°C for 48 hours. After that, the beer is ready to drink.</p>
<p>&#8211; Some beers benefit from a longer maturation period, so you can also leave it in the Oxebar for another week before serving.</p>
