<p>KEY LIME PIE GOSE RECIPE<br />
Recipe for 5 gals (18.9L):<br />
-6.6 gals (~25L) Water<br />
______________________<br />
~8 LBS [3.63 KG] of Grains<br />
-62.5% Wheat<br />
-25% Pilsner<br />
-12.5% Munich I<br />
&#8211; 1 Sleeve of Graham Crackers (I&#8217;m sure it adds some fermentables but I didn&#8217;t calculate it)<br />
______________________<br />
Mash @ 152ºF (~67ºC) for about 45 mins<br />
Chill to under 100ºF (~38ºC)<br />
Pre-acidify with Lactic Acid to pH of 4.5<br />
Pitch 16oz of Good Belly<br />
Wait until pH has dropped to 3.5<br />

Boil for 30 mins:<br />
-0.25oz Motueka (~7g) @ 30min<br />
-0.5oz Motueka (~14g) @ flameout<br />
-8g Key Lime Zest  @ flameout<br />
-5g Kosher Salt @ flameout<br />
______________________<br />
-Kolsch Yeast or any German ale yeast<br />
Ferment around 65ºF (~18ºC) for ~7 Days<br />

-2oz Vanilla extract in keg (feel free to modify based on your taste but this was nice to me)<br />

Original Gravity: 1.045<br />
Final Gravity: 1.008<br />
ABV: 4.7%<br />
IBUs: ~6</p>

<p>She got started with 1 gallon batches and scaled up 5 gallons for a brew club serving event. Within a year of making her first batch, she entered a huge competition won a medal her Ice Cider!</p>
<p>Diana mostly uses store-bought juice, but she&#8217;s also pressed her own apples with a crusher and press. Her approach is practical: if she wants a specific apple character, like Granny Smith, she&#8217;ll use store-bought as the base and blend in a half gallon of freshly pressed juice to dial in the flavor.</p>
<p>If you&#8217;ve been considering cider making as a hobby, just do it! Diana encourages you to experiment and just see what happens.  </p>

6 lb (2.7 kg) Maris Otter<br />
1.25 lb (0.57 kg) Munich<br />
1 lb (0.45 kg) Crystal 40L<br />
11 oz (0.31 kg) Biscuit<br />
1 lb (0.45 kg) Pale Chocolate<br />
3 oz (85 g) Chocolate malt<br />
Imperial’s House (at least 2 packets or a starter)<br />
0.4 oz (11 g) Warrior Hops </p>
<p>Batch size: 6 gallons (22.7 liter)<br />
Original gravity: 1.047 SG (11.7°P)<br />
Final gravity: 1.011-1.013 SG (2.8-3.3°P)<br />
ABV: 4-5%<br />
IBU: 19</p>
<p>Mash at 152°F for 45 minutes<br />
Boil for 60 minutes<br />
Pitch yeast at 64°F and let rise to 66°F.<br />
When gravity drops to about 1.012, raise fermenter to 68°F until fermentation is complete.<br />
Do a diacetyl test to ensure none is present before crashing.<br />
